Self-hosting Matrix and other LAN-based fun

I'd like to setup a local network and step participants through running Kind (k8s in docker) and running ESS Community (the fully-FOSS version of the Element Matrix stack). we're going to set DNS records on a local wifi network and setup chat servers and clients so we can send federated E2EE messages back and forth. we might even be able to play around with video calling, get people to be able to connect their phones to it, all of that.
